Sardines with Tomato, Capers and Garlic
Yield 2-4 servings
This is my favorite way to prepare sardines – with zero fish-y-ness – you won’t believe how good this is!
1 tin sardines such as wild planet sardines in olive oil
1 garlic clove
1 lemon, juiced
kosher Salt and black pepper
Drain fish and rinse (serving the juice for your family pet!). Marinate sardine fillets in a nonreactive bowl with garlic, lemon juice, salt and pepper for 6 hours – or overnight in your refrig.
